Mango Pico De Gallo
A summer favorite. The thing you use to put on your tacos but then end up just eating spoonfuls of by itself- mango pico de gallo! This is perfect as it is as an appetizer with tortilla chips. If you wanna change things up on taco night though, this is your best friend. I highly suggest making this when the produce in this recipe is in seasonally, so that our wallets can vote to make less of a carbon footprint.
Mango & Avocado Pico de Gallo

Ingredients:
- 1 large tomatoe diced
- 1/2 red onion finely chopped
- 1 mango diced
- 1 avocado diced
- 1/2 cup fresh cilantro chopped
- juice from 2 medium limes
- 1 tbs sea salt
- 1/2 tsp fresh garlic
- 1 tsp olive oil
- 1 small jalapeno chopped
- 1 tsp honey
Instructions:- In a medium bowl whisk together lime juice, salt, olive oil,, honey and garlic
- Peel and chop the mango into small pieces and add to bowl. Do the same with the tomato, avocado, red onion and jalapeno.
- Mix everything well in the bowl and then add in cilantro, mixing throughout.
- Serve with tortilla chips, spoon onto tacos and burritos, mix into rice or grilled veggies. Or even add it on top of a salad!
