Raw Vegan Snickers Bars
My childhood favorite- snickers! I used to hoard these every Halloween and hide them from other house dwellers under the bags of frozen food in the freezer to munch on all hours. I discovered these flavors are just as accessible in things like dates, peanut butter and coconut if you simply get creative, and a bonus…they don’t leave your stomach in cramps if you have a few extra. These are a crowd pleaser and a great dessert to get non-plant based haters into believing!

- prep time: 15 mins
- freeze time: 2 hours
- total time: 2.25 hours
Servings: 12 bars
Ingredients:
first and last layer (make a double batch):
- 10 tbs melted coconut oil
- 10 tbs raw cacao powder
- 2 tbs maple syrup
second layer:
- 3/4 cup almond flour
- 3/4 cup coconut flour
- 5 tbs melted coconut oil
- 1 tsp vanilla extract
- 4 tbs non dairy milk
- 1 tbs maple syrup
third layer:- 9 medjool dates
- 4 tbs peanut butter
- handful of peanuts
- 2 cups boiling water
Instructions:
- Line a 8x8 or 9x9 pan with parchment paper and make some room in your freezer to fit pan
- Make the first layer by combining all ingredients. If it is not mixing together well, you can heat it all together in a double boiler. Spread into bottom of pan evenly and place in freezer for 15 mins
- While the first layer is freezing, begin making the second layer by combining all ingredients and mixing well. Then spread this layer on top of the first layer and place in freezer for another 15 minutes
- While first two layers are in the freezer, begin making the third layer. Pitt the dates and pour the hot water over them in a safe bowl. Let the dates soak for 10 minutes. In a food processor or high speed blender, combine the dates after they have been soaked, peanut butter, peanuts and three tablespoons of the water the dates soaked in. Spread this layer evenly on top of other two layers and let freeze for ten minutes
- Make another batch of the first/last layer or if you made two batches bring that out. Spread evenly on top of all layers and freeze for at least 1 hour
- Remove from freezer and cut bars in pan or out of pan, your preference! Enjoy
