Sunday Morning Pancakes
Breakfast is the best meal of the day. I don't mean to state an opinion as fact but it's truly the one category of food that you can eat happily (I hope) from the moment you wake until you go to bed. Who doesn't love breakfast for dinner?
Sunday Morning Pancakes

Servings: 5-6 small/medium cakes
Ingredients:- 1 medium ripe banana
- 3/4 cup oat flour or gluten free flour mix
- 1/2 cup oats (gluten free if that's important for you)
- 1/2 cup oat milk
- 1/8 cup maple syrup
- 1 tbs flaxseed meal & 3 tbs warm water (flax egg)
- 1/4 tsp baking soda
- pinch of salt
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions:- In a small bowl combine flaxseed meal and warm water. Whisk together and let sit for 5 minutes
- In a medium size mixing bowl add ripe banana and mash completetly with a fork. Then add the rest of ingredients and mix well, pressing through any chunks. Add the flax egg after 5 minutes
- Heat a pan or griddle to medium heat with a little bit of coconut oil or any oil you have. Start making your cakes whatever size you like. Flip when bubbles form and pop throughout pancake
- Top with warm maple syrup, your favorite fruit, seeds, nuts, or nut butters.
- Enjoy and smile while you do so!
