Raspberry, Chocolate and Peanut Butter Stuffed Date Truffles

Ingredients:

  • 10 medjool pitted dates
  • 10 raspberries
  • 10 tsp or less of peanut butter
  • 1/4 cup your fav dark chocolate
  • 2 tbs coconut oil
  • 1 tbs water

    Instructions:

  • Pit each date and open them up, trying to keep the bottom of date in tact.
  • Stuff bottoms of dates with your choice of raspberries and/or peanut butter. I like to do 4 dates with just peanut butter, 4 dates with just smushed raspberries and 2 dates with both.
  • Melt dark chocolate, coconut oil and water in microwave. Stir every twenty seconds until melted.
  • Pour chocolate over each date.
  • Freeze for 1 hour or eat right away. My favorite way to enjoy, on the floor with a pal and a glass of oat milk. Maybe even queue up some Ziggy Alberts while you're at it.
