Blueberry Oat Crumble Bars

Ingredients:

For the crust and crumble

  • 1 1/2 cups oat flour
  • 1 cup old fashioned rolled oats
  • 1/2 cup coconut sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 8 tbs vegan butter
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract

    For the filling
  • 2 1/2 cups blueberries (fresh or frozen)
  • 4 tbs pure maple syrup
  • 1 tbs cornstarch or arrowroot starch
  • 1/8 tsp almond extract
  • pinch of salt

    Instructions:

  • Preheat oven to 350 degrees and line a 8x8 baking pan with parchment paper
  • In a large bowl, make the crust and crumble by adding in all the dry ingredients first. Then melt butter and add vanilla and almond extract in. Mix with fork for a few moments and you should see a crumble start to form.
  • Place 1 3/4 cup into the lined pan and press down evenly. Place the remaining crumble into the fridge as you prepare the filling.
  • To make the filling, heat a saucepan over medium high heat and add in blueberries, syrup, cornstarch (or arrowroot) almond extract and salt. Bring to a boil and then reduce heat and continue to cook for 5 minutes, stirring throughout
  • Pour blueberry filling over the crust.
  • Sprinkle the remaining oat crumble on top and bake for 30-40 minutes. Allow bars to cool completely and then refrigerate or store at room temp. Cut bars into as big or small squares as you please!
